Bruschetta

Bruschetta ingredients

 

 

 

 

 

 

 

 

 

If you were from Italy, you would call this tasty appetizer, ‘bru sket ti,’ toasted bread layered with a delicious mix of olive oil, garlic, Italian spices, and lots of fresh vine ripe tomatoes.

I can’t help myself when I see all my tomatoes turning bright red on the vine.  I’m off to the store for fresh-baked baguette and basil.

Bruschetta Ingredients

2 Loaves of French bread, sliced

Olive oil

Garlic, granulated

Salt to taste

 

 

 

 

 

Tomato Toppingbruschetta tomato mix

2 lbs Roma tomatoes

½ c cup olive oil

1 tsp dried oregano

1 tsp dried basil

3 cloves garlic, crushed through a press

¼ c fresh chopped basil

Salt to taste ~ ½-1 tsp

 

 

Instructions

Dice tomatoes and marinate in the above mixture. It can sit on the counter for a few hours. (Avoid refrigerating it as the oil will harden).

Brush sliced bread with olive oil and sprinkle with garlic and salt; toast under broiler.

Spoon tomatoes on warm bread and serve!
